You can enjoy Limoncello, a delectable Italian liqueur, on the rocks or straight up. This liqueur is ideal for enjoying on a patio in the summer after dinner, and there are so many ways to serve this refreshing drink.

Ingredients:
- 4 Mediumย Size lemons
- 2 Cups Vodka
- 2 Cups Water
- 1 1/2 Granulated sugar
Instructions:
- Wash and scrub the lemons under hot water. After washing, remove the outer peel using a vegetable or potato peeler, and remove as much white pitha using any knife as possible.
- Add the peel and vodka to a large glass jar with a tight-closing lid, seal it tightly, and leave it in a cool, dark place for 12 days.ย
- After the 12 days, in a medium-to-large saucepan, boil the water and sugar until the sugar dissolves; let the mixture cool completely.
- Meanwhile, strain the vodka/peel mixture through a fine mesh strainer or even cheesecloth. Pour the strained mixture into the cooled sugar and water syrup, and stir well to combine.
- Let the Limoncello sit for a day or two at room temperature. Refrigerate or freeze for at least five hours before consuming. Serve straight up or over ice. Enjoy!

- The time needed to make Limoncello depends on the lemon oil content and liquor proof.
- Unless you are very familiar with your lemon variety, you have to be a detective and taste-test every few days after a week has passed.ย
- A lower-proof vodka will require an additional week or more to reach maximum lemon flavour.
- Don't worry about how long your bottle sits out infusing; the high-proof liquor will prevent mold from growing. However, should you see any signs of discoloration or something fuzzy growing, discard, sanitise your bottles, and start over.
