Ingredients:
- 1 tbsp Vegetable oil
- 1 Yellow onion (diced)
- 1 Poblano pepper (diced)
- 3 Cloves Garlic (roughly chopped)
- 1 Red bell pepper (diced)
- 1 Orange bell pepper (diced)
- 1 Zucchini (diced)
- 1 Yellow squash (diced)
- 1 cup Frozen yellow corn
- 14 oz Green chiles (Can)
- 1 cup Cherry tomatoes (halved)
- Kosher Salt (to taste)
- Freshly cracked black pepper (to taste)
- 2 cups Freshly grated cheddar cheese
Instructions:
- In a large cast iron skillet, heat the vegetable oil over medium-high heat. Add the onion and poblano pepper and sautรฉ for 4-5 minutes until the onion is translucent. Add the garlic and stir to combine.
- Next, add the various bell peppers, zucchini, and yellow squash and cook for another 5 minutes until the zucchini and squash are slightly soft. Add the corn and green chiles, then sautรฉ for a few more minutes to thoroughly warm the corn. Remove the skillet from the heat and add the tomatoes; stir to combine.
- Finally, top the mixture with the grated cheddar cheese and cover for a few minutes to allow the cheese to melt. Serve immediately.
