Three ingredients make the flourless, high-protein, gluten-free cottage cheese flatbread, which adds 18 grams of protein to your sandwich or wrap! This healthy and protein-rich alternative to traditional bread has gained popularity for a reason. It provides texture, taste, and simplicity all in one.

Equipment for Making cottage cheese flatbread at Home

Ingredients:

For Flatbread

  • 3⁄4 cup Cottage cheese (2%)
  • 1 large Egg
  • 1 tbsp Dried oregano
  • 1 tbsp Garlic powder

For Additional Toppings

  • 1 tbsp Mayonnaise
  • 4 slices Turkey breast
  • 1⁄4 cup Baby arugula
  • 2 slices Tomato
  • 1 tbsp Balsamic glaze

Instructions:

  • Preheat the oven to 375F (190C).
  • In a food processor (or blender), add the cottage cheese, egg, and spices. Blend until creamy.
  • Evenly distribute the mixture onto a parchment paper-lined baking sheet. My baking sheet was 9 by 13 inches, but any larger one will also work as long as you spread the batter into one even layer.
  • Spread (or shake) it evenly into a rectangle.
  • Bake the flatbread for 30-35 minutes, or until it sets and turns golden.
  • Let it cool for 5—10 minutes. On one side of the flatbread, add your favorite sandwich toppings and enjoy!
