This Easy Lima Beans Curry cooks frozen Lima beans in a creamy, deliciously spiced coconut cream sauce. You can prepare this vegan curry in less than 30 minutes and serve it with rice or roti. They make for a delicious side dish any time of the year!

Equipment for Making Lima Beans at Home

Ingredients:

  • 1 cup Frozen Lima beans
  • 1 Yellow onion
  • 4 Cloves Garlic
  • 1 Inch Ginger (approximately 2 teaspoons)
  • 3 tbsp Coriander
  • 1 tbsp Smoked paprika
  • 1⁄2 tbsp Turmeric
  • 1⁄2 tbsp Cayenne (can be omitted for a mild curry)
  • 1 cup Coconut milk
  • 1 cup Crushed tomatoes (chopped)
  • 2 tbsp Oil
  • Salt (to taste)
  • Pepper (to taste)
  • Cilantro (for garnish)

Instructions:

  • Peel and chop the onion, ginger, and garlic.
  • Add the oil to a large, heavy bottom pan, then add the peel and chopped onion, ginger, and garlic. Sauté for about 7–10 minutes, stirring often.
  • Then add in the coriander, smoked paprika, turmeric, cayenne, coconut milk, chopped crushed tomatoes, and frozen Lima beans and stir well.
  • Cover the pan and let the ingredients simmer for about 10 minutes.
  • Turn the stove off, remove the pan from the heat, and season the Lima bean curry with salt and pepper. Serve garnished with chopped cilantro.

Note:

  • Place a large pan on the stovetop, set to medium heat, and sauté the onion, ginger, and garlic for about 7–10 minutes. Keep stirring these ingredients as they sauté to avoid burning.
  • After all the ingredients are in the pan, make sure to cover it with a lid so the liquid does not evaporate.
  • If the curry is too thick for you, add a little water or vegetable stock to thin it out.
