Equipment for Making Protein Cookies at Home
Ingredients:
- 2 Eggs
- 2โ3 cup Unsalted peanut butter
- 1โ2 cup Granulated sugar (white, coconut, brown etc.)
- 1 tbsp Vanilla extract
- 1โ2 cup Vanilla protein powder
- 1โ2 cup Baking Soda
- 1โ4 tbsp Salt (omit if PB was salted)
- 1โ2 cup Chocolate chips
Instructions:
- Preheat the oven to 350 degrees Fahrenheit, line a baking sheet with parchment paper, and set it aside.
- In a mixing bowl, whisk together the eggs, peanut butter, sugar, and vanilla until smooth.
- Fold in the protein powder, baking soda, and salt. It will be thick!
- Fold in the chocolate chips.
- Scoop using a 2-tablespoon scoop and roll into balls. Flatten. Since they won’t spread much while baking, roughly shape them into cookies.
- Bake for 8 to 12 minutes (I do 10 in my oven), depending on preference. They will firm up slightly as they cool.
- Let cool on the baking sheet for 20 minutes, then enjoy!
Note:
- we used vanilla pea protein, but any type, such as whey, should work!ย
